莲蓉月饼 - Lotus Paste Mooncakes

延续着单蛋黄莲蓉月饼, 这月饼纯用莲蓉为馅料。做法方面和前者几乎大同小异,可以参考前者的制作方法。不过在这里省了咸蛋黄和其所需要的步骤。另外我也把在烘烤时涂上蛋黄的步骤也省略掉, 保留了原有漂亮的图案。 至于其馅料的份量则改为每份100克。

以下的份量可制作大约十粒的月饼。

材料 Ingredients:
烘烤月饼皮
(A)
220克 糖浆220g Golden Syrup
60克 花生油60g Groundnut Oil
1/2茶匙 枧水1/2 Teaspoon Alkaline Water
(B)
300克 低筋面粉,筛过300g Low Gluten Flour,Sieved
馅料 (Filling)
1000克 莲蓉馅,分成每份100克,搓圆1000g Lotus Paste,Divide 100g Portion, Shaped Round

莲蓉月饼在烘烤出炉过了大约三天之后, 就开始“出油”了,这时候可慢慢品尝了。

  5. Hi Charmaine, it is fine even the Alkaline Water is not used. It wouldn't effect the taste of the mooncakes too much. ^^
