[阿豐推荐]之浓郁香蕉蛋糕 - Rich Banana Butter Cake

香蕉蛋糕一向来都是我喜爱的牛油蛋糕之一。为了追求更完美的香蕉口味,这回不惜重本用了香蕉王(Pisang Raja)。 顾名思义,这香蕉王以香味、甜度和口感取胜于所有的品种之中,。又以需求量常高于产量,所以其价钱和其他相差几倍。故市面上的香蕉蛋糕很少使用这种香蕉作为材料。唯有亲自下手才可以吃到这浓郁香蕉蛋糕。蛋糕里边每个角落都充满了香甜的香蕉肉,吃起来实在美味,直呼过瘾。

材料 Ingredients:
250克牛油250g Butter
280克低筋面粉,筛过280g Low Gluten Flour, Sieved
180克幼砂糖180g Castor Sugar
4粒鸡蛋4 Eggs
1 茶匙发粉1 Teaspoon Baking Powder
1 茶匙苏打粉1 Teaspoon Sodium Bicarbonate
500克 香蕉肉500g Banana (Pisang Raja) Flesh
1 茶匙盐1 Teaspoon Salt
2 汤匙牛奶水2 Tablespoon Milk

做法 Method:
首先将香蕉肉中压烂成泥。Photobucket
加入盐和牛奶于香蕉泥拌均,备用。Photobucket
将低筋面粉、发粉和苏打粉混均, 备用。Photobucket
将牛油和幼糖打至松发呈乳白色。Photobucket
逐粒加入鸡蛋。鸡蛋必须分次加入,每打一粒鸡蛋,确定它完全被搅拌其中, 方可继续加入下一粒鸡蛋。Photobucket
加入一半的混均粉,顺着一个方向,例如逆时针反方,使用蛋糕抹刀(spatula)切拌(fold-in)。
加入一半的香蕉泥搅均。Photobucket
再加入剩下的混均粉切拌。Photobucket
再加入剩下的香蕉泥搅均。Photobucket
将面糊倒入蛋糕模里,然后放入预先加热的烤炉烤大约45分钟, 香喷喷的浓郁香蕉蛋糕就可出炉享用了.Photobucket

  9. Hi, I'm tempted to try this cake out. I can't read chinese so I might have missed this out. May I know how much this recipe will make? And what size loaf pan did you use for this cake?

  10. Hi TracieMoo, I think the total ingredient would less than Rm20. I used the loaf size mold for this recipe. ^^

  13. @DeeDee,you can use 180 degree Celcius preheat and bake the cate. ^^
